Roti
Originating in the Indian subcontinent, roti is a flatbread that is eaten primarily as a snack, topped with sweetened condensed milk, sugar, banana, and/or chocolate. Roti is distinctive in that it is an unleavened bread, unlike other popular Indian flatbreads such as naan. It is commonly available fresh from Thai street vendors.

Ingredients
- 2 cups (240 g) durum wheat flour
- ½ tsp (2.5 ml) salt
- ¾ cup (180 ml) water
- 1 Tbsp (15 ml) vegetable oil
Directions
- Combine flour, salt, water, and vegetable oil in a medium bowl, mixing until dough pulls away from sides of bowl.
- Turn dough out onto a well-floured surface and knead until smooth and elastic, approximately 10 minutes.
- Divide dough into 12 equal pieces and shape each into a ball.
- Cover dough balls with a damp cloth and let rest for 5–10 minutes.
- Flatten balls using the palm of your hand, and then roll out each piece using a rolling pin until 6–8 inches (15–20 cm) in diameter.
- Set a dry skillet (no oil) over medium-high heat.
- Add dough circles to hot skillet, fry for 1 minute, and then flip.
- Repeat flipping/cooking process until cooked through.
- Remove roti from skillet when it is completely cooked with some dark brown spots.
- Serve roti warm.
