Kluay Buat Chee (Bananas in Coconut Milk)
Kluay buat chee literally means "bananas who have entered nunhood," a possible reference to the similarity between the bananas floating in coconut cream and Theravada nuns who would shave their head and eyebrows before donning a white robe. This smooth, creamy dessert combines the sweetness of ripe bananas with the richness of coconut cream. It can be served hot, warm, or chilled.

Ingredients
- 3 cups (720 ml) coconut milk
- 10 ripe bananas, peeled and each cut into eight pieces each
- 1 cup (200 g) sugar
- 1 tsp (5 ml) salt
- ½ cup (120 ml) coconut cream
Directions
- Pour coconut milk into a large saucepan and bring to a boil over medium-high heat.
- Add bananas.
- Reduce heat and simmer until bananas are quite soft.
- Add sugar and salt, stirring to dissolve.
- Stir in coconut cream and immediately remove from heat.
- Serve warm.
Notes
- One way to obtain coconut cream is to skim it off the top of a can of unshaken coconut milk. The cream is more likely to separate in cool weather or in the refrigerator.
- Add 8–10 lychees for a tangier flavor.
