Kluay Buat Chee (Bananas in Coconut Milk)

Kluay buat chee literally means "bananas who have entered nunhood," a possible reference to the similarity between the bananas floating in coconut cream and Theravada nuns who would shave their head and eyebrows before donning a white robe. This smooth, creamy dessert combines the sweetness of ripe bananas with the richness of coconut cream. It can be served hot, warm, or chilled.

Ingredients

  • 3 cups (720 ml) coconut milk
  • 10 ripe bananas, peeled and each cut into eight pieces each
  • 1 cup (200 g) sugar
  • 1 tsp (5 ml) salt
  • ½ cup (120 ml) coconut cream

Directions

  1. Pour coconut milk into a large saucepan and bring to a boil over medium-high heat.
  2. Add bananas.
  3. Reduce heat and simmer until bananas are quite soft.
  4. Add sugar and salt, stirring to dissolve.
  5. Stir in coconut cream and immediately remove from heat.
  6. Serve warm.

Notes

  • One way to obtain coconut cream is to skim it off the top of a can of unshaken coconut milk. The cream is more likely to separate in cool weather or in the refrigerator.
  • Add 8–10 lychees for a tangier flavor.
