Ingredients

  • 1 14-oz (414-ml) can coconut milk
  • ¼ cup (59 ml) water
  • 2 cups (360 g) jasmine rice, rinsed
  • 1 tsp (4.5 g) coconut oil

Directions

  1. Place coconut milk, water, and rice in a saucepan.
  2. Bring mixture to a boil, cover saucepan, reduce heat, and simmer undisturbed for about 10–12 minutes.
  3. Remove saucepan from the heat and let rest, covered, for about 10 minutes.
  4. Stir in coconut oil and serve hot.
