Ingredients

  • 2 cups (500 g) shrimp, peeled and deveined
  • 2 Tbsp (30 ml) soy sauce
  • 1 lime, juice only
  • 2 tsp (8.4 g) sugar
  • 1 tsp (2–3 g) diced red chile pepper
  • 4 Tbsp (56 g) butter, melted
  • ½ cup (100 g) snow peas
  • 4 shallots, diced

Directions

  1. Place shrimp in a large bowl.
  2. Add soy sauce, lime juice, sugar, chile pepper, and butter, mixing until well combined.
  3. Let mixture marinate for at least 30 minutes.
  4. Place wok or skillet over medium heat.
  5. Add shrimp to the hot pan and stir-fry for 1–2 minutes per side.
  6. Remove pan from the heat and stir in the snow peas.
  7. Divide mixture between two serving plates.
  8. Sprinkle each serving with shallots and serve hot.

Notes

  • Prawns may be used in place of shrimp.
