Tua Guan (Mung Bean Pudding)
Tua guan is a Thai pudding made with mung beans and coconut milk. Either yellow or green mung beans can be used. Some recipes add tapioca flour or shredded coconut. This popular dessert or snack is easy to make and is served warm with a splash of warmed coconut milk on top.

Ingredients
- 1/3 cup (80 ml) coconut milk
- ½ cup (100 g) mung beans
- 1 pinch salt
- ¼ cup (50 g) sugar
- ¼ cup (30 g) tapioca flour
- 2 cups (475 ml) water
Directions
- Combine mung beans and water in a medium saucepan.
- Bring to a boil and cook until beans are tender, about 20 minutes.
- Stir together tapioca flour and 1 cup (240 ml) of water in a small bowl until dissolved.
- Stir mixture into boiling mung beans, stirring continuously as it begins to thicken. Add a bit more flour or water if necessary to obtain the consistency of gravy.
- Add sugar to pot and return mixture to a boil.
- Remove pot from heat.
- Combine coconut milk and salt in a microwave-safe bowl and heat in microwave for a few seconds to warm. Do not allow to boil.
- Serve pudding warm topped with warmed coconut milk.
