Tua Guan

Tua guan is a Thai pudding made with mung beans and coconut milk. Either yellow or green mung beans can be used. Some recipes add tapioca flour or shredded coconut. This popular dessert or snack is easy to make and is served warm with a splash of warm coconut milk on top. Recipe Servings: Serves 2

Ingredients

  • 1/3 cup (80 ml) coconut milk
  • 1/2 cup (100 g) mung beans
  • 1 pinch salt
  • 1/4 cup (50 g) sugar
  • 1/4 cup (30 g) tapioca flour
  • 2 cups (475 ml) water

Directions

  1. In a medium saucepan, combine mung beans and water. Bring to a boil. Boil until beans are tender, about 20 minutes.
  2. In a small bowl, dissolve tapioca flour in 1 cup (240 ml) of water. Add this mixture to boiling mung beans.
  3. Stir continuously. Mixture will begin to thicken. Add a bit more flour or water if necessary to obtain the consistency of gravy.
  4. Add sugar to pot. Bring mixture back to a boil.
  5. Remove pot from heat.
  6. In a medium bowl, combine coconut milk and salt. Place in a microwave for a few seconds to warm. Do not allow to boil.
  7. Serve pudding warm with warm coconut milk on top.
