Nam Pla Prik
This Thai sauce appears on the table at every meal, as ubiquitous as salt and pepper in the Western world. A blend of sweet, sour, umami (savory), salty, and spicy flavors, it goes well on everything from noodle soups to fried rice. No Thai meal is complete without it. Recipe Servings: Serves 4–6

Ingredients
- 2 garlic cloves, minced
- 1 tsp (5 ml) red pepper flakes
- 4 Tbsp (60 ml) sugar
- 2 Tbsp (30 ml) lime juice
- 4 Tbsp (60 ml) fish sauce
- 2 Tbsp (30 ml) water
Directions
- Combine all ingredients, stirring to dissolve sugar.
- Correct seasoning, and dilute with water if necessary.
- Serve in individual bowls at room temperature.
