Nam Pla Prik (Traditional Thai Sauce)

Nam pla prik is a Thai sauce that appears on the table at every meal, as ubiquitous as salt and pepper in the Western world. A blend of sweet, sour, umami (savory), salty, and spicy flavors, it goes well on everything from noodle soups to fried rice. No Thai meal is complete without it.

Ingredients

  • 2 garlic cloves, minced
  • 1 tsp (5 ml) red pepper flakes
  • 4 Tbsp (60 ml) sugar
  • 2 Tbsp (30 ml) lime juice
  • 4 Tbsp (60 ml) fish sauce
  • 2 Tbsp (30 ml) water, more as needed

Directions

  1. Combine garlic, red pepper flakes, sugar, lime juice, fish sauce, and water in a bowl, stirring to dissolve sugar.
  2. Correct seasoning and dilute with additional water if necessary.
  3. Serve in individual bowls at room temperature.
